Imaginative Realism, Color and Light by James Gurney are my top favorites. It has pretty art and teaches! Creating Characters with Personality by Tom Bancroft is my go to character design book. I also use Fantasy Cartooning by Ben Caldwell for inspiration since the stuff in there is very similar to Don Bluth's style of drawing. It does have some neat tips too.

As for art collection books, my favorites have to be from Bob Eggleton and Rodney Matthews. The two on my desk are Greetings From Earth and Last Ship Home. They are out of print though so only way to find them is online.
